My female co-worker's response to reading this:

put in my request for the French fries and fat free/cholesterol free, 3 servings of veggies movie theater popcorn with extra salt and butter

It might not be as far fetched as your coworker thinks. Sugar substitutes allowed a big industry of diet drinks and meals and sugar-free candy. So the first company that comes up with a substitute for cooking oil that doesn't get absorbed by the body could start a huge market for fat free products of all sorts. All it takes is finding that one single molecule that has the properties of fat without being digestible.
